FNS Challenge: Day 2


Day 2 of the FNS Challenge and the Thrifty team is starting to get creative! Though we had some tuna salad sandwiches and turkey sandwiches for lunch – the creative meal award today goes to Hakima! She cooked up some rice, added some frozen veggies and a scrambled egg, and spiced it up with soy sauce and pepper to make a delicious and nutritious lunch!

We’re all feeling the pressure of not having our afternoon coffee fix too! We all started dragging a bit this afternoon without our iced coffee! We’re certainly learning that it’s difficult to make filling, nutritious meals on such a tight budget. Especially when a few of our co-workers who aren’t participating come into the breakroom with take out, complete with milkshakes. I don’t think we ever wanted a milkshake so badly!

We did learn that you can use coupons with your FNS benefit, so we have certainly taken advantage of that! Tamara was able to get $3 off chicken, so she will be able to have chicken with her dishes 3 times this week! And she will also use some veggies from her garden, giving her some extra options and budget to spend on other essentials.

Jennifer has over 5 years of experience in the marketing industry - all of it spent in the Triangle area. She graduated from UNC-Chapel Hill in 2008 with a degree in Psychology and began working at a local marketing agency as the Office Administrator. She moved her way up in the company, eventually becoming the Director of Project Management. But marketing is her true passion, so she gladly took the opportunity to join the Thrifty team as Marketing Manager. Jenn enjoys photography as a hobby and is working on getting a website of her photos together to share with the world. She also spends most of her time chasing around her two Scottie puppies, Angus and Duncan.
